Rainbow Hash
This is the yummiest and healthiest breakfast I have ever come up with and it’s loved by the whole family. We eat it at least twice a week and never get bored of it. I love this recipe because it contains four portions of vegetables, can be prepped in advance, and it all goes in one dish!
I have also created an avocado alternative to top it with as avocados are expensive and not very environmentally friendly so we are doing our best to not consume them (though full honesty; I do still give them to the children occasionally as they are a great source of healthy fats for them).
Serves 4 | Prep Time: 15minutes | Cook Time: 40 minutes
Ingredients
- 2 medium sweet potatoes (around 800g), peeled and chopped into 1-inch chunks
- 1 courgette, chopped into 1-inch chunks
- 1 red bell pepper, chopped into 1-inch chunks
- 1 tin of kidney beans, drained
- a couple of handfuls of frozen sweetcorn
- 2 tbsp oil
- 1 tsp salt
- 1 tsp pepper
- 1 tsp garlic granules
- 2 tsp cumin powder
Topping
- Avocado mashed with lime juice OR
- Avocado alternative (recipe below)
- Chilli flakes
Instructions
1. Set your oven to 180C.
2. Peel and chop your sweet potato into 1-inch chunks, then chop your courgette and red pepper into 1-inch chunks too.
3. Put your oil, salt, pepper, garlic granules, and ground cumin into your dish. I use a 30cm by 20cm enamal dish.
4. Put your chopped veggies into the dish, pour your drained kidney beans on top and mix it all around to cover everything in the oil and spices.
5. Put the dish in the oven and cook for 30 minutes.
6. Remove from the oven and add in a few handfuls of the frozen sweetcorn before popping it back into the oven to cook for another 10 minutes.
7. Remove from the oven and top with the avocado alternative (or mashed avocado) and sprinkle over the chilli flakes. Enjoy!
Avocado alternative
Ingredients
- 1 cup of frozen peas
- 1 tbsp vegan mayonnaise
- juice of half a time
- pinch of salt, pepper, and garlic granules
Method
Boil the peas for 2/3 minutes, then add to a food processor with all the other ingredients and whizz until smooth. If you don’t have a processor you can mash with a fork, it just takes a bit longer.
