Granola Recipe
I love having homemade granola in the house, it is super simple to make and is the perfect solution for those mornings when you are running a little late or haven’t planned breakfast. We like to have ours with yogurt and berries in the summer and hot fruit compote in the winter months. Our whole family love it; I actually make double this amount as between all of us it really doesn’t last that long.
This recipe is really flexible and you can add more of what you like and leave out what you don’t. We love it with almonds and hazelnuts so have lots of those, but my Mama prefers it with just pecans, whereas Summer is strictly cashews, almonds and dried cranberries – you can experiment and see what your family’s favourite combination is.
Ingredients
- 250g oats
- 150g mixed nuts and/or seeds
- 1tsp cinnamon
- 50g vegan butter
- 2tbsp maple syrup
- 60g brown sugar
- 1tbsp rapeseed oil (or another vegetable oil)
- 150g dried fruits (I like cranberries and sultanas)
Method
- Heat the oven to 150C and grease a baking tray.
- Put all of your dry ingredients into a nice big mixing bowl.
- Melt the butter and add to the dry ingredients along with the oil and maple syrup, giving it all a good mix around ensuring that the oats and seeds are nicely coated.
- Spread the mixture out in a single layer on the baking sheet and cook for 30-40 minutes until golden and crunchy. I like to give it a stir halfway through.
- Once it has cooled you can add the additional dried fruits before storing your granola in an air-tight box for a couple of weeks, though it doesn’t last anywhere near that long in our house!
