Granola Cookies Recipe

These cookies were created on a super cold morning when jack frost had visited and the air was crisp. There was a little robin singing from a branch of the bare cherry tree and two little bears were absolutely certain that we were going outside. I knew that once we came back into the warmth after our adventures in the frozen world we would want blankets, cocoa and a comforting snack. These cookies hit the spot as a great snack because they are quick and easy to make, vegan and gluten-free, reasonably healthy for a cookie, and taste like an absolute treat. Added bonus; even the littlest of hands can get involved in making these.

Makes 16 cookies.

Ingredients

  • 6oz/150g oats
  • 4oz/100g oat flour
  • 4oz/100g granulated sugar
  • 1tsp baking powder
  • 1tsp ground cinnamon
  • 4oz/100g vegan butter – melted
  • 1tsp golden syrup

Method

  1. Preheat the oven to 160C and line a baking sheet with paper or lightly grease with oil.
  2. Put the oats, oat flour, sugar, cinnamon and baking powder into a bowl and give them a quick mix. (Note: you don’t need to buy the flour for this, you can simply blitz oats in a blender to “create” oat flour)
  3. Add the butter to a small pan on a low heat, and once melted stir in the teaspoon of golden syrup.
  4. Add your wet mix to your dry mix and stir until incorporated, it can feel a little sticky but that just makes it extra fun for children to lick their fingers.
  5. Take walnut sized pieces of the mixture, roll into balls and pop onto the baking tray leaving about 2 inches between each cookie.
  6. Once all the mixture is on the tray pop it into the oven and cook for 12-15 minutes until the cookies are golden.
