PB&J Porridge
If you think porridge is boring then this is hopefully the recipe to change your mind. We have this three or four times a week and it’s neither boring nor stodgy (the two most common reactions I get from people at the mention of the word porridge). This porridge is sweet, savoury, creamy, healthy and easy. It’s comfort in a bowl and is also loved by toddlers. I do believe that this is the Queen of porridge dishes.
Little heads up here, ideally it does need some soaking, preferably overnight.
Serves 2 (big portions)
Ingredients
- 1 cup oats (gf certified if needed)
- 1.5 cups of water
- 1 cup of oat milk (or more water)
- 2 bananas – chopped small
- 2 tbsp smooth peanut butter
- 2 tbsp raspberry jam
- 2 tbsp flax and chia seeds (optional, but they give a massive health boost)
Method
- The night before soak your oats in the water.
- In the morning add the chopped banana and milk (or more water) to the pan. Put over a medium heat and cook until the porridge is bubbling and hot (add more milk/water if it thickens past your preferred consistency).
- Poor into bowls and top each one with 1tbsp each of peanut butter and jam and, for an extra health hit, the flax and chia seeds.
