Vegan Gumbo Recipe

I had the idea of this recipe going around in my head for a few months after watching a lot of HomeTown and falling down a Southern food rabbit hole. Then last December when I was in the supermarket they had most of the ingredients on offer for 50% off; I took it as a sign and went for it. A few tweaks later and we have a hit!

I like this recipe because it is full of big bold flavours, feeds a lot of mouths so is perfect for a large gathering of friends and family, and is also the ultimate bowl of comfort food. It perfectly represents November in a bowl.

It is a pricier meal, as it has lots of processed vegan meats in, this is one of the reasons it took me so long to give it ago, but I honestly believe it is well worth it!

Ingredients

  • 2 tbsp vegan butter
  • 1 large white onion – finely chopped
  • 2 stalks of celery – finely chopped
  • 2 Red bell peppers
  • 1 Green bell perpper
  • 2 tbsp Plain flour
  • 1 or 2 tsp chilli powder
  • 1 or 2 tsp Paprika
  • Small bunch of thyme
  • 1 kg Sweet potatoes – peeled and chopped into 1inch chunks
  • 6 large cloves of garlic – finely chopped
  • 8 Vegan chorizo sausage (my favourite is Plant Pioneer)
  • 6 Vegan sausages (my favourite are Plant Pioneer)
  • 1 litre of vegetable stock
  • Bag of quorn chicken pieces (280g)

Method

  1. Start by turning your oven to 180C and cooking for 20 -30 minutes until the are golden
  2. While they cook melt your butter over a medium heat and add your onion, celery and bell peppers and cook until softened.
  3. Stir in your flour and continue to cook for 20 -30 minutes until the roux goes a nice dark colour (simlar to peanut butter). (Also, dont forget to check on your sausages at this point!)
  4. Add in the garlic and sweet potatoes and cook for a few minutes
  5. Add the stock and herbs and spices and then cook over a meduim heat until your sweet potatoes are almost soft.
  6. Chop up your cooked sausages and chorizo and add to your pan along with the bag of quorn pieces.
  7. Cook for another 10 minutes and then season to taste with salt and pepper.
  8. Serve in a nice big bowl with some rice and a sprinkling of spring onions and enjoy.
