Zombie and Vampire Gingerbread Men

I saw a photo of Zombie men on Pinterest years ago and I loved it so much I’ve been making them ever since.

These biscuits are really nice and simple, great for making with toddlers and taste delicious.
Once you’ve rolled out your biscuit dough you could obviously make any shape you’d like; whilst I was doing zombies and vampires the children made lots of bunnies!

Ingredients

  • 1/2 cup butter
  • 1/2 cup brown sugar
  • 1/4 cup molasses
  • 1/4 cup golden syrup
  • 2 1/2 cups plain flour
  • 2 tsp ground ginger
  • 1 tsp baking powder

Method

1. Preheat your oven to 180C and grease a baking tray.
2. Beat together the butter, sugar, molasses and golden syrup.
3. Sieve in the flour, ground ginger and baking powder and mix well.
4. In batches, roll out the dough until it is about 1/4 inch thick.
5. Cut out your men (or rabbits – or whatever you fancy really) and pop them onto your baking tray. They will feel a bit delicate but they hold together well (and the joy of Halloween biscuits is they don’t need to look perfect).
6. Bake for about 10 minutes until they are nice and brown.
7. Leave to cool on the tray for a minute or two and then move to a wire rack to cool completely.
8. Ice your spookiest creation!

I hope you enjoy making these. I absolutely love creating them each year and now I’m doing it with the children it’s even more fun. Everyone wants a vampire bunny right?

Happy Halloween!
