Vegan Chocolate Chip Pancakes

This breakfast has become a bit of a staple in our house. It’s a combination of all my favourite things; quick, easy, uses staple foods we always have in and tastes and looks extra special so everyone feels spoilt when eating it. If we’re feeling extra fancy we will even get out a nice tea set to enjoy our breakfast with a little extra pazzaz. I love it when you can start the morning with something extra special that doesn’t cause any extra stress in the kitchen.

The other thing that I love about this recipe is that it is easy enough for toddlers to join in too. My two love mixing the ingredients together, dropping in the chocolate drops and even flipping them (this bit can get messy!).

Ingredients

  • 10.5oz self raising flour
  • 2 tsp sugar
  • 1 tsp baking powder
  • 350ml oat milk
  • 3oz vegan chocolate chips

Method

  1. Put a small amount of oil in your cast iron skillet or heavy bottomed pan over a medium-high heat.
  2. Weigh out all the dry ingredients into a bowl and whisk together.
  3. Slowly pour in the milk, stiring as you go to avoid any lumps. You want to add enough milk to create a nice thick, but pourable, batter.
  4. Once your skillet is hot start to add dollops of your batter into the pan. I use my eighth of a cup measuring cup to make them roughly the same size (when I’m not taking requests for bunnies or Mickey Mouse!).
  5. Once the batter is in the pan add a sprinkling of chocolate chips and cook for 3 minutes.
  6. Flip the pancakes and cook for another 2 minutes.
  7. Regrease your skillet lightly and repeat.
  8. Enjoy!

As I said, our family really enjoy tucking into these and because of the chocolate chips there isn’t much sugar in the recipe and you don’t need anything sweet to serve them with. They do taste really good with fresh berries, I know that much!
