Vegan One Pound Meals By Miguel Barclay
This cookbook has become a regular go-to for weekday meals. The meals are quick, easy and cheap, which helps if you are trying to keep your food budget down. The meals we have tried have all been delicious and some of the thrifty tips and tricks I have added to other meals. For example, he makes a super speedy cottage pie and puts a few gravy granules into the sauce to add colour and a depth of flavour, I now do this for other pies I am making as it works so well and is great for fast cooking.
The book has breakfasts, mains and puddings in it and lots of lovely big photos.

This cookbook is what I call a weekend cookbook. The recipes are generally more complicated and the ingredient list is long, as are many of the recipes. All of the recipes we have made have been absolute crackers (onion bhaji burgers anyone?!) but I save it for when I have more time. It’s the perfect book for when you have family and friends over and want to do something a little bit different and special.
I also love that it groups recipes into themes or cuisines; if you are doing Indian food for example, you can look at the front of the book and see all of the recipes from that cuisine. This is super helpful if you are planning a large meal for a group as you can find starters and sides to go with your desired main course.
15 Minute Vegan By Katy Beskow
This is a relatively new book to us but we adore it. The meals are quick and completely different to other recipe books. Whilst One Pound Meals does vegan versions of comfort food and family classics, this book teaches you how to use ingredients in ways you may not have tried before and it has helped us to broaden the amounts of vegetables we are eating on a weekly basis. Before, I only used aubergine in pasta sauce or a ratatouille, but this book has a wonderful recipe that uses them in a kebab. Likewise, edamame beans are something I never felt very confident trying to cook with but this book has a wonderful recipe for edamame on toast which I successfully made, without any issues, and if you get or already have the book I really do recommend trying it yourself!
The instructions are really clear, there aren’t hundreds of ingredients, and the photos are beautiful.
