Two Overnight Oats Recipes
I have loved overnight oats for many years; they’re cheap, healthy, easy to make and can be made in advance, all of which are winners in my books. My love for them doubled when they became the only thing my little girl would eat during her ‘fussy two-year-old’ stage. This stage only lasted a few months but felt much longer! Knowing that she would eat ‘pink porridge’ (raspberry overnight oats) and drink a smoothie each day made this stage a lot easier to manage, although it was of course a little repetitive.
This post has our two favourite overnight oat recipes. I make these three or four times every week, they are great breakfast or emergency snack options for children as well as portable breakfasts for adults.
I’m currently working on a few new flavours so will update you if I create any winners!
Serves 1 adult or 2 toddlers.
Raspberry and vanilla
Ingredients:
- 1/2 cup oats
- 1/2 cup milk
- 1/4 cup yogurt
- 2 tsp raspberry jam
- 1 tsp vanilla extract
- 1/4 cup of fresh raspberries
Method:
- Put the oats, milk and yogurt into your container and mix well (I use a jam jar but you could use a bowl or Tupperware).
- Add in your jam and vanilla extract and mix again.
- Pop your container into the fridge overnight, or for a minimum of a few hours if making it in the morning.
- When you are ready to eat, stir in the raspberries and enjoy!
Note: If taking to work/out and about I mix the raspberries through in the morning and pop my container into my bag to enjoy later.
Chocolate banana
Ingredients:
- 1/2 cup oats
- 1/2 cup milk
- 1/4 cup yogurt
- 1 tsp cocoa powder
- 2 tsp maple syrup
- 1 banana, chopped
Method:
- Put the oats, milk and yogurt into your container and mix well.
- Add in the cocoa powder, maple syrup and chopped banana and mix thoroughly.
- Put your container in the fridge overnight.
- Enjoy in the morning!
As you can see I add the banana the night before to help it soften a bit but I like to add the raspberries in the morning so they keep their shape.
