Bunny Shaped Easter Pancakes
Sourdough pancakes are an absolute favourite in this house. I make them almost every Sunday for the family to enjoy after our Sunday morning walk. This year I will be making them for breakfast on Easter Saturday (and probably Monday too!) and to make them even more fun for the occasion I will be making them bunny shaped.
This is a super easy and frugal way to get into the Easter ‘theme’ using something you already have and do. It will take minimal effort on my part to shape the pancakes but will make the children really happy.
I created my sourdough starter (called Myrtle) 3 years ago now and she is still going strong. If you are interested in creating your own starter this is my recipe.
For the best pancakes, you need to start this the night before, but they do still taste nice if you do them in a rush in the morning (because like me you forgot!).
Ingredients
- 1 cup bread flour
- 1 cup oat milk
- 1/2 cup starter
- 1 tbsp maple syrup
- 1/2 tsp apple cider vinegar
- 1 tbsp flax seed
- 1 tsp baking powder
Makes 25 pancakes, depending on size.
Method
- The night before whisk together the flour, milk, starter, syrup and vinegar, cover with a tea towel and leave to bubble away until the morning.
- In the morning heat your pan (I strongly recommend cast iron) on medium heat and grease with coconut oil.
- Whisk the flax seed and baking powder into the batter and you are ready to start cooking.
- Normally I do about 1 tbs of mixture per pancake and this gives us 25-30 little pancakes. For the bunnies I place 1 tsp of mixture in a circle and then add ½ tsp of mixture for each of the ears. I prefer to start at the top of the ears and go down to connect them to the head.
- Cook the pancakes for 2-3 minutes on one side, until it has little bubbles on it and the outside looks ‘set’, then flip and cook for a minute on the other side.
- I then pop them onto a plate and keep them warm in the top oven.
- When ready serve with your favourite toppings.
We like to eat these topped with fresh fruit and maple syrup or cooked fruit, which we heat up on the hob in a little vegan butter and coconut sugar. For Easter I will add raspberries as noses and tails (as shown in the photos) to present to people but I can guarantee that they will soon covered in much more fruit and syrup!
It is also worth noting that if your bunny ears aren’t long enough and your children are obsessed with Mickey Mouse like mine are, they will think they are Mickey heads – this isn’t a bad thing!
